  Daphne is the most knowledgeable expert on nutrition that I have encountered. She has devoted her life not just to food but also to the way the choices we make in what we eat impacts on our environment and the world as a whole.
  All her books are brilliant - Living Foods imparts all her philosophy and Fermenting is full of great recipes.
  Her courses are fun, delicious and informative and it really is such a treat to have Daphne share all her wisdom and indepth knowledge. You leave her knowing so much about how to heal yourself, your family and our lovely world.

  I had an enormously enjoyable, informative and relaxed day at the Byres in Lewes a few weeks ago, learning about all things fermenting with Daphne. It was such a great location for the workshop - away from the cut and thrust of city life and somewhere more mindful, which felt right and just added to the experience on the day. The course touched on so many things from the history and benefits of eating ferments and then of course there was the making of them and we were delighted to take our lovely rye loaves home with us. We helped prepare some of the things we had for lunch as well as enjoying a beautiful beetroot soup Daphne had prepared. All in all a great day and I'm already planning my next visit!
